Jersey cows produce the best all round milk. Unlike most other breeds used for dairy products, the Jersey cow has a high concentration of A2 beta-casein Proteins. A2 have been widely linked with digestive well being.
Someone along the way decided they didn't like that thick layer of cream that would naturally settle at the top of good quality milk. Homogenisation was introduced to stops this by 'blasting' the fat in the milk to make the particles smaller and less likely to 'float'. These smaller, unnatural particles are at a size making them able to attach themselves to your arterial walls. This is conducive to bad health.
The sole purpose of Homogenisation is aesthetic and aside from its possible negative health effects, it may reduce the quality of flavour and we quite simply will not do it.
Because milk poured from glass simply tastes better than milk stored in plastic or cartons!
It also works out great for the environment, imagine the amount of plastic prevented from ending up as landfill that will be achieved by Sunnydale Dairy (and you of course!) choosing re-usable glass as our preferred method of packaging.
